According to Lee Reich(Uncommon Fruits...):

"For best flavor, beach plums must not be picked before they are dead ripe.
Like other stone fruits, beach plums will not ripen after harvest; they will
soften and some complex carbohydrates may turn to sugar, but they will not
develop the aroma and sweetness of bush-ripened fruits."

If you have no choice, then why not try, but wait until the last minute. You
may be better off covering them in hopes of a delayed warm spell. For me,
the red stage is several weeks before full ripeness, so you'll need some time
on the bush.
