Lori,

You don't "store" slips. You store the sweet potatoes at 50-55F and in
spring plant them in soil or water--the top should be obvious to a "planty"
person. After a few weeks (3-4) you'll get up to a dozen or more slips for
each tater you plant, which you break off a week or so before planting. I
then wrap the bottom ends of the bunch in a little sphagnum or a damp paper
towel and put in plastic under bright, indirect light. Roots'll form and
you plant 'em. Remove all but the top leaf or two and bury the stem up to
the growing point. You can just remove the slips from the sweet potatoes
and plant them without going through the rooting process but I get a little
better survival when I've rooted them.

If I see that a particular variety of sweet potatoes is starting to rot
sometime during winter storage I plant that variety earlier and grow it as a

houseplant until late spring, when I start sprouting the ones that have
stored fine. It's as easy as (sweet potato) pie.

Never, ever put sweet potatoes in the fridge!
