Megan,
I sure can't make a cultivar recommendation for your area - Topgun may be able to - but your best bet may be to contact someone at the UC Davis Fruit & Nut Research Center ( http://fruitsandnuts.ucdavis.edu/ ) for recommendations.
I don't know what pecan pathogens/pests may be prevalent in your part of the country, but here in the east, pecan scab is one of the most important, and home or low-input plantings really need scab-resistant varieties. So...be sure to inquire about varieties that will produce reliably for a homeowner - it doesn't matter if a variety is the very tastiest if it's going to require a spray regimen that a homeowner is not going to be able to accomplish.
Pecans are monoecious, but your mom will need at least two different pecan varieties with compatible pollen-shed/nutlet-receptivity patterns in order to get good nut crops set.
