I don't wash them; I leave that to the chef/final user.  I don't think they need washing and wouldn't for my own use, but that's me.

I wear gloves and long sleeves and get right in there.  For the next round I harvest in a couple of days, I'll bring a milk crate to sit on in the middle of the patch.  Felt a little too precarious to be leaning over all those stingers.  

You only harvest the top one or two leaf sets; I use a good pair of scissors and just snip them off.  I guess the lower parts are more fibrous and don't taste as good, and once they flower it's too late. I'm going to try mowing them in about a week to see if I can still get a high quality harvest on the re-growth.

I think it would work for a market setting...if you had an educated clientele.  Might start with a small quantity, some good recipe/nutritional info handouts, and see if your more adventurous customers would go for it.  

For the chef, I deliver in a large clear bag so everyone knows what's in it once it's in the cooler!  If I were selling them at market I would keep them loose in a crate so they stayed fresher, maybe mist them occasionally, and pull out as much as the customer wanted with tongs into clear bags.  Oh, and some Danger! signs :)

There are probably folks on this list who have a lot more experience with this than I do...

I second everything that's been said.  I am also learning the joys of foraging this spring.  I'm only doing stinging nettles this year but have a couple of friends who are doing a bunch of other stuff - ramps (sustainably harvested, of course), garlic mustard, dandelion greens, wild garlic...and others I'm forgetting but will be much more familiar with next spring!  At $13/pound to chefs, I'm pretty thankful for the giant patch of nettles right by my field.

We also sell lots of greens.  I grow the summer crisp lettuce type and grow it nearly year around.  We start transplanting them out in mid March, into unheated high tunnels.  I also plant kale, tokyo bekana, arugula, cilantro, haikuri turnips and radishes.  

 

We plant in early to mid march for first weekend in May.  If you want a little sooner, you should plant at the end of February.

 

This year we planted spinach in a low tunnel and covered it with a single layer of Agribon 19.  I believe it was early March.  We have been picking wonderful spinach all this spring.  We also transplanted zucchini in another movable high tunnel in early April.  We will be picking them for next weeks market.

Hi folks,

May is not my favorite month.  All my farmers markets used to start at
the end of May, now they're starting at the beginning.  What do you
sell in May, and when do you plant it?  My high tunnels are full of
knee-high tomatoes that won't be making me money until June.

I'm adding rhubarb to my fields this year, and asparagus next year,
but I'm specifically interested in what those of you who do not heat a
greenhouse do to have something to sell this time of year.
