You are right about spinach in the summer here, but we are within a few weeks of planting it for our high tunnel winter sales.  At that time, the soil in the tunnels is still too warm for good germination, but the timing is perfect for our fall/winter crop.  Hence the extra effort we put into getting it up and going.

Spinach, being a cool season crop, is not likely to be a success in the south in summer

 

even if it germinates when planted, which leaves a few alternatives:

 

Make plantings at above 8000ft elevation where it is much cooler.

 

Grow substitutes like chard, lambs quarter, leaf beet, or tetragonia.

 

Put up a greenhouse and install enough air conditioners to keep soil and

 

air at +- 50F.
