We're helping supply veggies for a farmers market conference next
week. Chef requested 25 # each of arugula, spinach and leaf lettuce.
He passed on our hoophouse collards and kale, which would have been
easy.

With late fall tillage, row and snow cover, we've been blessed with a
nice stand of wild and standard, field-grown arugula, ~1000 sq ft. So
we could supply much of the 25#, but the picking time would be large.

We've been charging $8/# for spinach and large leaf lettuce, $10/# for
young lettuce and $16/# for mache.

Arugula growers, what do you charge for standard arugula, and for the
wild or 'Sylvetta' arugula? No flea beetle damage yet, and it's quite
sweet with the freeze/thaw.

Any hints for efficiency gains in arugula harvest appreciated, as can
sell to add'l chefs and a mid-March market.
