We dunk just about everything in cold water. Then, into the grape lugs, which
lets the excess water drain off before going into the cooler. There have been
times when I'm too busy and I have set buckets of squash or cucumbers into
the cooler first, with the idea of washing later. They never hold up as well.

Last year we started covering the lugs with plastic. We'd thought about
running a humidifier in the cooler, but covering with plastic seems to work,
at least for now. Okra in particular seems to hold up better if we let it
cool down, and then cover it. We don't hydro-cool the okra, rather we put it
in the lugs, spread it out in shallow layers, and let it cool down.

We did get some chilling injury on our okra last year, when we were running
the cooler below 50.

I guess that's the disadvantage. Different produce, different temp.
requirements, and only one little cooler.
