Depends on the market. In Indiana you have to get an egg license and in some states they require the eggs be held in a working fridge (like a dorm fridge plugged into your truck) but other states just require a good cooler with ice packs to keep the eggs at 42˚F. Talk to your farmers' market manager or a board member and ask them just what the rules are for selling eggs in your area/market.

You will need egg cartons and you will likely need coolers and blue ice packs (do not use regular ice as that will get the eggs wet and melt pulp cartons). It is best to use new cartons as eggs are alive and can pick up pathogens such as listeria and salmonella from cartons from factory farmed eggs.

As for price I would not sell pastured eggs from hens fed certified organic grain for under $3.50 a dozen.
