Value added is the Way! America loves preprepared foods and with a little
bit of time and imagination you can get much more $ for your products.
I'm lucky here in Idaho, the regulations state that I can work in a home
kitchen as long as I only do "non-hazardous" foods and only distribute at
farmer's market or to private customers. For the last 5 years now I've
been doing breads and other baked goods, herbal tea blends, herbal
vinegars, and jams. I sell these at farmer's market and and as add on to
the CSAs. It's established non-perishable products that can carry over if
not sold and leaves me with a inventory that can be sold off season. Go
for it BUT be very careful and be sure to follow all heatlh code
rules...they were established to protect the public. Most health
departments offer a basic course in food handling that Everyone should
take if considering prepared foods.
