What we used to do is to put the tomatoes in little cardboard trays -- we
packed them nicely (all the same color and size, 2, 4, or 6 fruits in
different size trays) and the customer picked out the tray she wanted,
handed it to us, and we put the tomatoes in a bag for her. This meant that
she got some choice, but was not allowed to paw through all our fruit. I
guess it was a little more work for us, but honestly I thought tomato
sorting was kind a fun job.
