Just thought of a very easy thing to do that is arguably a tiny improvement
on the current behavior:

("src/tds/config.c: If we see an unknown option value for 'encryption' in
config, assume it to be 'required', because that's safer than assuming
'no'.")

I see no harm in doing this and it seems slightly better if FreeTDS is built
with OpenSSL or GnuTLS and the user specifies "encryption = hell yes!" and
then gets encryption instead of not getting it.
