Hi Scott,

We are down to 8-12 Tablespoons (4-6 oz) of sugar in our 400-500 gallon
brewer and 3 tablespoons (1.5 oz) in our 100 gallon. A couple months ago at
SFI NY suggestion we cut all ingredients way back, compost is down to 18
cups in the 100 gallon brewer and 48 cups in the 500 gallon. Our fungal
numbers started coming up more consistently since then in the 2-3.5 active
range and DO remains in the 7-8 range throughout the 24 hour brew in our 500
gallon machine. Just got the 100 gallon up and it is being tested now.
