Just so you can see the difference what climate can do I am
responding to this question too. Here in western Washington the Korean
Giants ripen about the last of October, varying a little each year by how much
heat we have in October. Checking the seeds is a good way to tell if they
are ripe. I do that and also give them the ole taste test. Some
varieties start dropping their fruit too and if that happens you better do some
testing. Sometimes fruit will preharvest drop too so you have to watch out
for that.
