Bert,
I believe you are correct in that 'Elderberry goo' comes from the stems,
not the berries. When we process Elderberries, I put the harvested umbels
into plastic bags and keep them in the freezer until thoroughly frozen.
When I extract them from the freezer, I beat them (in the bag) which removes
berries from stems. In this way, we minimize the amount of stems that get
cooked along with the berries, thereby minimizing the messy goo.
I have never had this elderberry goo.
I strip all berries from the 'umbrellas' with a fork- thus no stem material.
Stem material may be the problem
Elderberry wine blended say 15% by volume enhances 'kit' Cab Sav wine.
