The last couple of years I have catered to my inherent tendencies of
disorganization. I make "Jam of the Season." In spring/early summer it is
currants, gooseberries, juneberries, cherries, strawberries and apricots.
In late summer it seems to involve plums, quince, peaches, grapes and black
currants. It is rather nice I think. My son seems to like the spring
version best.

If you want very little taste change. White currants work best as they have
very little flavor.
