That's one of the things about winemaking - it actually preserves some of the aromatic characteristics of the fruit that are destroyed by heat.  Using fruit that has been cooked or heated can give some very odd flavors.

... Muscadine grapes seem to change flavor and not so nice as a
wine after the steam juicer.  Same thing happened with mulberries..  Hector
