There is a book that I have read that has several chapters on different
kinds of training of fruit trees including espalier, US & Europe. It is
Dwarfed Fruit Trees by Harold B Tukey, published by the MacMillan
Company in 1964, with a second printing in 1970. Mr. Tukey had taught
at Michigan State University. You can probably get it through the
interlibrary loan. He covers trellising for both the amateur and the
commercial fruit grower, trees trained as cordons, espaliers, unusual
forms and designs.
