For the pizza I made for friends Sunday I simply put the dough out on
the garage workbench to rise. I think it was about 104 degrees out
there. This would count as one of the very, very few advantages to a
Phoenix summer.
I'm building a ramada in front of the east-facing garage to partially
thwart the morning blaze. As soon as I got the vigas secured
yesterday before daybreak I pulled a large tarp over the whole thing
and let it hang down nearly to the driveway. Thinking now about a
sheet hanging at the edge that I can spray about every, oh, five
minutes.
