Just a clarification that Epsom Salt is Magnesium Sulfate, not sodium. It can actually be quite beneficial for plants, and has been used as a plant nutrient for a long, long time. Although I suppose it's possible to use too much of any element, I would not be concerned about it harming my garden in the amounts in this recipe, and I sometimes mix it in to my tomato and pepper beds. It's not uncommon for soils to be magnesium deificient, although I'm not sure about the native NC soils. Analysis is the best way to know, but I'm lazy and usually just go with what organic method seems to give good results.

Similar to mine I've used for years.
First I just let them go, then I hand pick or cover to kill. Then reseed heavy to block out.

Lastly I do full vinegar, 1-tbs soap. I forgo the salt as it can build up over time in the garden(food) and draw moisture from plants.
But I'm sure a rotation of it on and off would hurt other areas at all.
