I usually do it after i spinout because the room gets warmer and the honey is polished [made max thick or so i reckon].

Honey becomes "mature" through evaporation and the action of enzymes. The latter occurs both before and after capping, and the former before. I have never heard of anyone trying to "mature" honey through artificial dehydration although it should theoretically work. If you hold the frame horizontal and shake up an down vigorously, if no honey comes out, it is mature enough to be extracted, capped or not. The problem with extracting "green" honey is the moisture content. If too high it will ferment. You can measure water content with a refractometer. About all you can do with "green" honey is mix it with really thick honey or cream it. Why don't you leave those frames on the hive for winter stores?
