"Yuk" to la comida de Mexico? It's wonderfully varied: one of the four
"great cuisines," along with Chinese, Italian and French - with Spain vying
for inclusion, of not already there. But despite the great variety, each
does have a national character, doesn't it? And what you like can depend on
what you grew up with. I grew up with Southeastern Italian, Sonoran Mexican,
and Irish - northern Mexican is my favorite, but Irish is the comfort food.
It does seem to surprise people that Latin American cuisines vary by
country.
Since I think familiarity breeds comfort, and lack of it may breed culinary
contempt, I wonder where you're from? I had one friend who though even the
most mild Mexican food was too spicy. He was from Maine, and said the
hottest thing he could handle were those red potatoes...

I am making plans to go back to Central America to continue our work.
I assumed the food in Costa Rica was like Mexican food,YUK. It was
different and good and plenty of fruit was always served. I will
seek out the guavas and see how many different kinds there are.
