I don't know if we are talking about the same thing, but we make what we call wild cherry jelly.  The cherries are small and black and the tree is large.  Some of them are over 70 feet tall.  Is this what you are talking about?

I'm not a wine maker, but enjopy it. Years ago I heard someone saying that the wild black cherry makes a wonderful wine.  You might try that. collecting enough to make wine would be a task.
