We have an apple called "Hoss" or "Horse". There's been so much change in spelling as names were mostly spoken in the old days but . It's early and some people call it "July Tart". It may well not be the apple you have. Bears in July here, wonderful tart flavor, but they quickly become mealy. Best apple crisp and pie ever. We core and freeze raw.

Is anyone familiar with an old apple variety called "Hess"? The only citation I have found is in an edition of Downing's book on fruit trees. A neighbor has a tree that has a tradition of being a Hess. This is in southern Vermont, and supposedly the Hess originated in Pennsylvania. It's a nice apple for eating and sauce.
