There are male trees that produce small, seedless fruits and also normal seeded fruits. "Szukis" is the main one sold. There are also females such as Early Golden and it's relatives (such as Meader) that will produce an occasional limb of male flowers, making it possible to get seeded fruit.

I don't think you can tell male from female till they flower so thats where grafting comes in.
