Tom,
I've overwintered apple/quince, pawpaw, oak, pecan/hickory/walnut in
above-ground pots, though my zone 6 winter may be milder than yours. I
usually try to get all my containerized stuff into one central location in
the garden and mulch heavily around (and over, to some degree) with
leaves/pine needles.
Only real failures I can think of have been an occasional fig that probably
would have done better if I'd gone to the trouble of actually sinking it in
the ground. However, I had some that survived last winter above ground,
and I never even got around to doing the mulch thang.
