As a self employed consultant I was always getting audited, usually for C
schedule, but nobody ever questioned the donation value claimed for SAR, or
other good

works as they are classified by the IRS.  Some comments below:

Regarding IRS taxes and deductions, federally or otherwise, the best thing to do is to consult your individual tax accountant as the rules will vary from state to state and individually.  Being a unit working in cooperation with authorities is one thing, doing volunteer work, your accountant and /or tax attorney can give you the best advise for this and/or call the IRS consulting in your state and ask them to send information.  If you are a non-profit etc.. there are certain records required.  And if your just starting up, thats a place to start!
 
You might find some of the rules bouncing you out of a non-profit, or out of a business. 
 
Be sure to inquire about volunteer work if you volunteer to see what is allowable.
