I’ve been told to stay away from grain cover crops because they will attract the wireworms, which I’m trying to get rid of. . .

Could you get two months out of winter rye? It works well for us between hills of pumpkins to suppress weeds, it goes away late summer so you don't get a lot of biomass, and you could follow it with buckwheat.
