If you are running lines that are very l;ong you need to consider the pressure drop over that length.  Being downhill helps but if you are pulling much water thought that 3/4 inch line over that length the pressure will drop pretty quick.  I used 2" layflat, it was cheaper, easier to take up and move and very low pressure drop.  Layflat should be ok across the rock unless you plan to drive over it and if that is the case I wouldn't use PVC or EMT anyway as it will just break unless you bury it at least a few inches.  If the rocks aren't sharp you could drive over the Layflat, its pretty tough stuff and I drive over mine all the time even with my tractor with ag tires, and haven't had any problems. I looked into PVC but it was more expensive.  You could put some dirt over the section of rock you plan to run the line over to help avoid damage.  You can also use orchard tubing which is cheaper than layflat but not as durable. I'm not sure what happened but some of my orchard tubing melted in the sun in spots.  Anybody know what the deal is?  Anyway I didn't see a location for you but if it freezes in your area you will either have to take the PVC up or make sure you can drain the entire length or you will be replacing it quite often unless you can bury it 3 ft or so depending on how deep your freeze line is.
