I would imagine they're just like any other watermelon. You just wait until the curl is dead and well dried.

Greetings,
Has anyone here ever grown white wonder watermelons? I am wondering how to
know when they are ripe. I know that they are a 3lb-5lb icebox melon, but
short of taking the scale into the field is there another way that I will
know when they are ready? Much to my surprise I have several that are larger
than a softball and getting quite green. These are planted in my high tunnel
as a trial. I planted 40 plants and foolishly thought that I would hand
pollinate. There are hundreds of flowers on gigantic plants and melons
shaping up everywhere. Pollination is not an issue and I have not pollinated
anything myself. Thanks for the input.
