And, this is exactly what we do. Our biggest seller, winter, and, now,
summer, is mesclun (second is baby spinach). Why? Because it is washed,
spun, bagged and they can take it out of the bag, put it on a plate and have
a salad. Lettuce, which is a lot cheaper to buy, gets a much smaller
percentage of the sales - not convenient. And other items sell, but not
nearly the volume. During the winter, we actually deliver orders to the door
on Saturday morning. Sounds like a lot of time, but we can do a 30-35
delivery "loop" in about 3-3.5 hours. If we sat at a pickup spot, half the
people would "forget". We charge a delivery fee that more than pays for our
gas, we limit delivery to the city limits (others can "meet" us at a
location) and it works beautifully. Whether we like it or not, ours is a
convenience culture, and as farmers, if we can cater to that, we'll sell a
lot more.
