we make fruit leather here in winter,
too much picking in summer.
we pick the fruit stew with as little water as possible then freeze until it
gets cool.
then we simply boil and add sugar as though we are making jam but don't have
to get to
115celcius because it doesn't have to set. we have used a little less sugar
than jam and
it was fine.
we don't bother with wrapping paper anymore it is too fiddly.
we just put the leathers onto oiled trays and then scrape it off when they
are dry.
we dry the leather at 50c fan-forced overnight. (we can't do solar drying
here it is too humid).

hello
i used to make excellent fruit leathers (roll-ups) for my daughters when
they were young
and i had more time.
first mash the ripe berries and mix with honey, spread on plastic paper and
put in food
dryer.
i would save the plastic wax paper from the inside of cereal boxes.
the other students would always try to trade their "joe louis" for the
organic fruit roll
ups.
