[permaculture] Mulching Out Thistle

i find that with thistles, as with many other tough perennials, frequent
cutting is a good way of getting rid of it. Another way is mulching with
straw/hay, then wait till the thistles/docks or whatever come popping
through, lift the mulch layer with a fork and drop it back on the weeds.
after repeating that procedure a few times, the weeds usually give up.
