How does one delay bloom? My peach and cherries get frosted out fairly
often due to early thaw then freeze in spring.

Delaying bloom more than a few days is difficuly. Two things you might try
to help. One is applying heavy mulch around the roots once deep frost has
set in to retain frost longer, delaying root activity. Second is white wash
the trunk, especially on the south half to reduce heat from the sun. That is a
good idea anyway to reduce south-west disease.
