That is quite a book. I have a copy.
The human microbiome, fermentation, fermented foods, prebiotics and
probiotics are very popular these days. It is a huge pastime and industry.
Walmart has excellent napa cabbage kim chee and it is really good.
For those interested in health, nutrition and foods I started a list for
discussion of these topics, pchealth.
I post valuable info there fairly regularly.
