Apparently there is an enzyme in honey that very gradually converts the
sugars to a small concentration of hydrogen peroxide. The enzyme is
destroyed by pasteurization.
The high concentration of sugars in honey also draws water out of active
microorganisms, so it's hard for them to survive except as spores. By and
large they don't grow in honey.
