Pear recipe gleanings; delicious things to do with pears.

... and as a condiment sweet/sour pickled pears with ginger (& maybe allspice, cloves, etc.) just as good if not better than watermelon rind pickle
pear jam is another delicacy; I would try mixing pear with wild plum for a tart but sweet jam

pears make a great pie. Just slice them into the crust (no need to peel in my opinion, but tastes vary), add sugar and nutmeg to taste and a little flour to soak up excess juices, bake like apple pie
Take one pound block of extra firm tofu, slice in half lengthwise, slice halves lengthwise then cut each quarter ino 1/2" short strips.
Heat wok (hand hammered carbon steel deep round bottom best)
[a chef's wok, 10", deep round ...bottom with tubular steel handle is perfect)
Add plenty of olive oil
Add diced tofu
Add lots of coarsely minced garlic...
Add cider vinegar (small amount) which caramelizes & adds a little sourness, important for the flavor of the finished dish
Add:
1) herb/veg seasoned salt (mild) Trocomare, Herbamare, VegeSal best
Alternative but much spicier (heavier flavor): Gayelord Hauser's SPIKE
2) black pepper, fresh, coarsely ground best
3) Tabasco sauce (or try Pickapeppa Hot Red Pepper Sauce - unbelievably good but expensive, very unique and pungent)
4) Lots of crushed hot red pepper flakes & seeds - cayenne, serrano or habanero or other type of hot pepper
Cook until very slightly browned or just before browning (best); don't overcook

Alternative recipe, Asian version:
eliminate the seasoned salt
add tamari soy sauce
substitute Chinese rice wine cooking vinegar (or Japanese brown rice vinegar or Ume Vinegar)
Add cooking wine or Mirin
Eliminate black pepper
Eliminate Tabasco hot sauce
Reduce the amount of crushed red pepper used in the non asian version
use olive oil or sesame oil or both
