In my (limited) experience, they taste apple-y (maybe with a hint of pear;)
the ones I cooked held their shape well. they also had a pink/orange flesh
color.
I don't know which cultivar I had used.
Quince paste (pasta de membrillo) in bars or Goya brand in the can is tasty
to slice thinly and serve with crackers and cheese. Sort of a like a fruit
leather, but more tender.
I'd plant a quince tree if they were not so susceptible to fireblight.

I couldn't find the type of apples I wanted to Thanksgiving pies, so I went
out to pick up some other ones, and came upon quinces.
Can I use them in a pie, maybe mixed with apples (and possibly cranberries)?
What texture do they cook to? How do they taste? Any advice?
