I'm going to say "no". I went to a grafting workshop, once, and I would have
found it extremely frustrating if I had to wait to get my hands on a knife,
and then had people watching over my shoulder to get the knife as soon as I
was done.
I agree with others that any sharp knife is probably okay. Personally, I
bought a grafting knife, and I like it because it's easy to keep clean and
sharp (I don't use it for anything else.) But I have occasionally used it
with the wrong hand, that is, with the rounded edge of the blade down instead
of the flat edge, and it still worked fine.
