The smaller jujubes are easier to dry. I know they canned jujubes in syrup,
put them in wine and made wine out of them in China. I have picked some up
from the ground at MTSU and never could figure out what they were good for
besides eating a few and maybe doing the above. The big fruited ones didn't
seem like good candidates at all for drying, and were more likely to smash
on hitting the ground. Of course, your trees won't get that big in your
lifetime. Donna
