I haven't noticed that but I also like to leave the white cherries on a long as possible. I find the taste improves that way.

I am planning to remove my Nanking Cherry bushes.
This past year, my 'white' (really a pale peach) variety fruited significantly for the first time and I ate the fruit over a period of a few
weeks. Soon after I started, I noticed that foods started tasting bitter. By the end of the season, an underlying bitterness in the fruit itself became more pronounced to me. I stopped eating the fruit and within 2 weeks my sense of taste was back to normal.
