As for watermelons, I have a Dothan soil which I tried several varieties of watermelons on about 20 years ago. Most of them were like yours----wouldn't ripen. They would get pink in the middle and not sweet, either. 2 things I found to get around the problem: reduce the nitrogen, plant only Crimson Sweet watermelon.
You might try using no chemical nitrogen fertilizer and use a little cottonseed meal for a nitrogen source. But Crimson Sweet was my solution. I grew it on the same ground for 3 years in a row and had the biggest watermelons the third year! It had been a bahiagrass pasture prior. I also keep the soil rototilled after every packing rain until the vines prevented me.
Also, I also have a contact who grows 100 lb watermelons in Kansas, also(I think) on another forum. He sent me some of his seeds. I could get info from him on his soil type and if it is similar, pass along his email address. He is retired(70+).
