I have had zero success training this cat to do anything. I would like to teach him to hold a pen and take notes for me, but he simply refuses to learn to read and write.

Our cat too. The first "6 toed" cat we ever owned. Sometimes he reaches in his food bowl and picks up a piece of (dry) cat food, using his thumb and pops it into his mouth. I bet we could train him to hold a fork if we rewarded him with canned cat food, his favorite treat.
