Ernest Plutko wrote, "I have eaten syrup from box elder. Tasted good at
first but a
bitterness became apparent."
My best guess is that the maker burned the syrup. There is too much
work involved in making maple syrup so beginners try to salvage the rest
unaware of the bitterness that permeates the whole batch. I have done that
very thing..........once.
