We like the Jonathans for drying. They do not discolor, and are crispy
and good flavor.

A few of my favorites for drying haven't come up yet, so here is my
list, roughly in the order of best to pretty good...
Bramley's Seedling, Cortland, Gold Rush, Smokehouse, Northern Spy (but
browns a lot), Tioga, Green Sweet, Ben Davis, Black Oxford.
