Hi Kids;
Every time I make a batch of wine, I try like mad to keep the damned
Acetobacter (vinegar bacteria) out of the must, or I will in fact wind up with
the vinegar you want.
However... the Acetobacter is all over the place, especially around apples.
Last year when I made the fruit fly trap out of vinegar, sugar and water, (equal
parts by volume) a large jellyfish of crud began to grow in the jar. Possible a
vinegar mother mass. It looked a bit grayish.
Also the jar was full of fruit flies, but I could have kept them out.
Some winemaking shops also sell mothers.
