Marie/Richard,
Elstar is Ingrid Marie x Golden Delicious. It has Cox's Orange as a
grandparent. From Holland 1972. It is an excellent eating and cooking
apple. It stays white when peeled so it is great for salads, BUT it is
very susceptible to anthracnose canker.
You don't say where you are, but if you are in a cool wet area, I'd stay
away from it.
Actually I understand it is a 'maritime' apple and doesn't like hot
areas either.
