Deb, are you in z4 or less (short summers)? Then I'd leave it be. If soil
is dry, defoliation now may cause winter dormancy-- I hope a z3 grower will
comment.
Definitely don't fertilize.

I have a pear tree planted early this spring that was visited by an
escaped goat. She managed to strip the leaves before I caught her.
Is there something I can do to help this tree survive and regrow (in
addition to putting a fence around it to keep goats out)? Extra water?
