We had a bumper crop of sweet cherries this summer, more than the birds and
my husband could eat off the tree and tried freezing them with a dusting of
sugar. We are disappointed in the taste and color (grey after thawing)
after freezing.
Anyone have any ideas what I can do with about 5 gallon of frozen sweet
cherries ? Unfortunately they also still contain pits. My husbands idea; he
said his mom canned them with out pitting them. We are going to invest in a
pitter and dry them next year. Any recommendations on a cherry pitter that
is easy to use ?
We also had a bumper crop of Starfire peaches last year and this year. We
have frozen them with minimal sugar in plastic bags and they were fine after
being frozen for one year. There was very little loss of flavor from
freezing.
I have the same problem about how and when to use preserved fruit. Part of
our problem is I still don't know how to use the fruit after it has been
preserved, especially the cherries. And until I figure that out I dont know
how or in what package size to prepare the fruit for storage.
Do we have a recipe book for fruit other than fresh fruit?
that might be a great way to make money--offer it to local bookstores,
shops, etc.
thanks ,
