Limes are immature when the fruit is green and yellow when fully ripe.
Limes and lemons are very different types of citrus. The 'Meyer' lemon
produces a very sweet, low acid fruit that is much different from the
lemons you purchase in the produce department.
There are dwarfing rootstocks that can control plant size. Citrus are
commonly grown and sold in containers in Southern California, but the
long term growing of citrus in even a 15 gallon container will involve
root pruning and repotting and a sun room or greenhouse.
