Tanis is absolutely correct. I've had stiches from grafting and the secret
is to hold the knife steady and pull the wood through (if only you could do
this on understock when field grafting). So the bevel should be up when
you're holding the knife.

cutting yourself you should hold your knife arm steady and pull the stick
away from yourself. Takes a little practice to get used to, and the trouble
with a single-bevel knife is you may be more comfortable with knife in left
hand, and the stick in the right.>>
